Baked Buttery Cod Loins
Preheat oven to Gas Mark 5, 375ºF (190ºC)
Place Cod Loins in a greased metal baking tray.
Thickly butter the top of each piece.
Season to taste with sea salt, black pepper and lemon juice.
Cover with foil, and cook on the top shelf for 30 minutes.
Be gentle with the fragile cooked fish.
Serve with the accumulated juices, with potatoes and veg.
