Prime British Fillet Steak but, hung for 10 days minimum. During this process enzymes break down connective tissues, improving tenderness. Moisture evaporation concentrates flavour, making it deep, rich and mellow. Hanging meat has declined generally.
Cook in a griddle pan, to get close to the restaurant's char-grilled effect.

Cooking Instructions:
Defrost overnight in the refrigerator and use within 24 hours. Flash fry either side for 30 seconds, then cook for approx 3-5 mins.
