The finest smoked duck, made from grade 'A' barbery duck. A gourmet product. Serve cold. Great for starters or salads
1 breast, 170-200g (6-7 oz)
One breast nearer 200g (7oz). This rich meat will make two main-course salads, or three or four starter salads.
Preparation
 Only 'grade A' duck breast is used here. They are cured first, then cold smoked for 2-3 hours at 20-50ºC. The process is finished by heating up the smoke to 80-90ºC. This traditional smoking process ensures a distinct flavour, and maintains a moist end product.
Handling
 

Defrost in a refrigerator for at least 3 hours. Once defrosted use within 3-4 days (refrigerated)

The smoking process will toughen the meat, so its best served thinly sliced.

Ideal in or with salad, or serve with pickles.
