Swordfish Steaks (Xiphias Gladius) Skinless, boneless, vacuum-sealed, frozen-at-sea within hours of being caught (sword not included) half an inch thick.
Swordfish is delicious and versatile. A slightly denser flesh than most white fish. Great with both Mediterranean and Oriental flavours. Easy to cook.
2 x 170-230g (6-8 oz)
2 adult main course servings.
Cooking Guidelines
These will cook well from frozen, but they benefit from marinating whilst defrosting. Olive oil and lemon or lime juice, with some Eastern spices is lovely. Just sear and simmer.
Barbecue
Defrost overnight in refrigerator.
Marinate in olive oil, lemon or lime and your favourite herbs and spices for at least half an hour, though they will keep marinated in a refrigerator for a day.
Cook on med/hot barbecue for 8 to 10 minutes turning occasionally.
Oven
From frozen:
Put on a greased baking tray with a knob of butter and a dash of lemon juice. Cover with foil. Place in a preheated oven at 200ºC/395ºF/Gas Mark 5 for about 25-30 minutes or until cooked.
From defrosted:
As above, but 15-20 minutes.
Pan Fry
From defrosted:
Lightly oil and season with salt and mill pepper. Pan fry at med/hot temperature for about 8 to 12 minutes turning once.
Grill
From defrosted:
Place under a moderate grill for 10 to 12 minutes turning occasionally. Brush with seasoned oil if required.
